Cooking Sourdough Bread 5.2.24

There is nothing like the aroma of freshly baked sourdough bread unless it is enjoying a slice of freshly baked bread with butter shortly after coming out of the oven! Students will learn how to care for a sourdough starter, how to knead using two different techniques, and how to mix, shape and score the bread for baking. The instructor will demonstrate two ways to bake a loaf, using a cloche or a stone with steam in the oven, followed by a taste testing. Students will then shape, score and bake a loaf of their own in class. They will take home some sourdough culture (bring a 32 ounce container) for bread baking at home. A $5 ingredients fee is payable to the instructor at class.

Map and Compass Basics is a Next Step program from Maine Inland Fisheries and Wildlife. This workshop teaches use of maps to obtain distance, direction, and detail information and how to use an orienteering compass. Also learn how to use map and compass together. If you have a preferred compass bring it, but loaners are available. It's a combination indoor/outdoor session.

A comprehensive overview of diabetes in the United States, its various forms, insulin and blood regulation, the advantages of a healthy diet and exercise regimen, common medications and their side effects, glucose monitoring and the range of available technologies, and management tips are just a few of the topics that will be covered.

Instructor Information: Amy Kitchin has been teaching self-defense at the Maine Criminal Justice Academy since 2009. She has been a corrections officer since 2006. Amy currently works at the Pittsfield Police Department. The goal of the clinic is to have participants leave feeling confident and be able to protect themselves.

How well do you know our constitution? Our political leaders are always referring to one part or another, but do you know what it means for you, the average citizen? This class will be part instruction, part discussion group and part investigation into the truth about how our original government was intended to operate by our founding fathers (and mothers) and what changes have taken place over the last 240 years. We will read and study the original founding documents; the Declaration of Independence, The Articles of Confederation and The Constitution, including The Bill of Rights. What are your unalienable rights? If you do not know your rights, you effectively have none. As Thomas Jefferson said, "Freedom is not free; the price you must pay for freedom is eternal vigilance." This vigilance requires “We the People” to keep a watchful eye on our government and be aware when our unalienable rights are being violated. It is becoming more and more uncertain that we are being governed by the constitution given to us by our founding fathers.
