Let's Make Sourdough! 101 + 102

101: Starting the Starter | 6 - 7:30pm
Have you ever wanted to learn how to make your own sourdough bread from start to finish? NACE is excited to welcome the owner and baker of Little Acre Farm, Kayla Day, to our Winter/Spring 2025 classes!
In this introduction to making sourdough, Kayla will teach you how to make your own starter from scratch, including initially starting the dough and feeding and maintaining the dough until it is ready to be baked. She will go over common issues that can arise from making sourdough starters and show you what each stage of the dough should look/smell like. You will leave the class with your own starter dough that you will feed until it is ready for baking. The cost of this class includes everything to get started.
102: Ready. Set. BAKE! | 6 - 8pm
Now that you have learned the art of making your own sourdough starters, it’s time to see the different things that you can bake with it! If you took Kayla’s Sourdough 101 class and have a starter that is ready to bake you can bring it to class or purchase a starter before the class. In this class you will learn different mixing and folding techniques to get the perfect bread. You will also learn how to take any excess dough you may have and see what you can make with it. Kayla will have dough ready to bake in class and you will get to take home the loaves made to bake at home.
Materials list for the 102 class include:
- Unbleached Flour (any brand)
- Mixing Bowl (no particular size just enough for mixing the dough)
- Wooden Spoon or Dough Whisk
- Plastic Bench Scraper
- Towl (if you don’t have a towel there will be saran wrap available)
- Proofing Basket or Bowl
- Razer Blade or Lame

Paint Night: Pet Portrait

Come join Shirley Anderson for an engaging and beginner-friendly ‘Paint your Pet’ class! In this workshop budding artists will receive step-by-step guidance to create a beautiful portrait of their beloved furry or feathered companions. No Prior experience is necessary; Shirley welcomes beginners with open arms. Whether you’re a seasoned artist or picking up a brush for the first time, this class is a fun and rewarding experience as you immortalize your pet on canvas. After signing up for this class you will need to email shirl.art5050@gmail.com with 5 good quality photos of your pet. Canvas and paints are supplied.

Take a journey of self-exploration using art and media, along with your astrological chart, to create a vision for your year ahead. Words, pictures, and shapes that represent your aspirations, hopes, and dreams will be arranged on an astrological wheel to help you imagine your ideal future. A $10 materials fee is due to the instructor on the first night of class.
Zumba - 6 Week
with Maribel Deprese, Noble Adult & Community Education
Zumba - Fitness and Fun Dance is a total workout, combining all elements of fitness – cardio, muscle conditioning, balance and flexibility. Maribel mixes both low-intensity and high-intensity moves for a calorie-burning dance fitness party. Students of all experience levels are welcome in this class, and Maribel will help show students both low and high impact dance moves to fit students' class goals/abilities. If you’re looking for a no-pressure fitness class that brings lots of fun and energy, then this class is for you!
Bring a water bottle; wear comfortable clothes and indoor shoes with little to no tread to reduce twisting knee joints.

Mindful Stitches
with Heather Coombs, Noble Adult & Community Education
Start the new year with calm, creativity, and mindfulness. In this soothing class, instructor Heather will show you how to take printed fabric and enhance it with simple yet beautiful embroidery accents. Learn to slow down and enjoy the meditative process of stitching as you transform fabric into one-of-a-kind art. No experience needed—just bring your curiosity and a desire to begin the year with intention.

Rotisserie Chicken Class
with Jeffrey Darnell Carpenter, Wells-Ogunquit Adult Community Education
This class will introduce delicious lunch and dinner meals by using affordable rotisserie chicken already cooked and ready to go. Fun, easy, and chef friendly meals. This is a hands-on class where participants will have the opportunity to work the recipes. Please bring a Tupperware container with you to take home the leftovers. Each participant will receive a whole chicken to work with and also a recipe book to take home. Grocery fee of $10. due to instructor at time of class.

Introduction to Acrylic Painting
with Gayle Fitzpatrick, Noble Adult & Community Education
This class covers composition, color theory, and color mixing, as well as materials and techniques. You’ll learn and practice the fundamentals of painting with acrylics. Class will provide time for experimentation, creativity, and the opportunity to work on your own projects with guidance from the instructor. Beginner and Intermediate painters are both welcome!
Class size limited to 10.

Heartsaver First Aid/CPR with AED: Adult & Child
with John Coffin, Merrymeeting Community & Adult Education
Become certified in First Aid/CPR/AED – Adult and Child. All the equipment (manikins and AEDs), videos, Student Workbooks, and consumable supplies are provided. Included in the course are adult and child CPR with AED and first aid skills, where the students demonstrate the skills learned. Upon successful completion, an American Heart Association First/Aid CPR and AED Certification card will be sent to the student, valid for two (2) years. For those taking the course to meet U.S. Coast Guard requirements, a Certificate of Completion that indicates this course meets the requirements of 46 CFR 11.201 for Merchant Mariner Credential will also be issued.
