NEW Cold Weather Scones

Time to get out the sweaters and have some tea!  Scones are the perfect accompaniment! In this 3 hours class we will make Harvest Pumpkin Scones, Double Ginger Scones, Savoy Hotel Classic Scones, Maple Bacon Scones and Cranberry Orange scones.  All ingredients provided as well as instruction. No experience needed. Be sure and bring a container to take home samples that you do not eat on the spot! You will FALL in love with the flavors!

Remember to bring a container to store all that you will take home. $55 fee includes $10 materials fee.  No experience necessary.

Prepare quick, wholesome meals! Discover techniques that provide ideas for fast meals including sheet pan chicken, pea & spinach risotto, salad entrees, quick stir fry, and panna cotta. Come prepared to cook, taste, and enjoy! Bring an apron and a sharp cutting knife.

Moira Rascati, a graduate of Culinary Institute of America in NY, has been a professional chef for 40+ years and at Joseph's by the Sea in Old Orchard Beach for more than 30. She is currently an instructor at SMCC in their culinary arts and nutrition programs.

Pie Crusts for the Holidays!

The holidays are just around the corner and who doesn't love a fresh baked pie? Learn to make this simple-yet incredible, pie dough and ways you can make it either sweet or savory. Chef Mary will show you how easy it is and offer expert advice on how to master making homemade pastries. This is a demonstration class, however, you are welcome to either watch or put on an apron and join in the fun. Recipes provided. Please bring 1 LB COLD unsalted butter, mixing bowl, spatula, rolling pin, and baggies for pie dough.

Mary Bailey, pastry chef and past owner/chef of Thyme and Honey Bakery in Biddeford, is passionate about baking bread and teaching people how to incorporate homemade bread into their daily lives.

In this exciting and hands-on class, students will have the unique opportunity to unleash their creativity by carving their very own wooden spoon and crafting a beautiful gourd bowl. Not only will participants learn the art of carving, but they willalso have the option to personalize their creations with stunning paint designs or experiment with the intricate technique of woodburning. To facilitate the wood burning process, a wide variety of stencils will be readily available, allowing students to add an extra touch of artistry to their bowls. As the class comes to a close, we will gather together to savor a delicious group meal, where we will proudly enjoy hearty soups and crusty bread served with our newly crafted spoons and bowls. And the best part? The nourishing and comforting meal is on me, a delightful way to celebrate our accomplishments in this incredible class.

Acadian Arts Asian Fusion Cooking Retreat at Homeport Inn, Searsport, ME 

Your instructor, Chris Toy is the author of 6 popular cookbooks, a private chef, and has taught Asian-fusion cooking for several Maine community education programs. Cooking students will learn how to prepare a variety of recipes from Asia, Europe, and the Americas incorporating traditional and local ingredients. Each meal will actively engage cooks with the tools, techniques, and stories behind the dishes being created.

Step back to a time when President Franklin Roosevelt, Eleanor, and their family escaped to their “beautiful little island” in the Canadian Maritimes, Campobello Island. We will be exclusive guests of the international park, staying in historic Victorian cottages. Workshop participants will explore and paint the same coastal scenery enjoyed by the summer residents at the turn of the 20th century. All meals are included in the workshop fee as well as specially planned optional evening activities designed to extend your learning from the day’s workshops, including a private concert by award winning Celtic Fiddle player, Katherine Moller, in the Victorian parlor of Hubbard House. Register for the retreat then call Sherry Mitchell at 506-752-2922 to make room reservations. Acadian Arts Retreats participants will have exclusive overnight accommodations in the park.
