Grow Your Own Edible Mushrooms!

Mushrooms are fascinating and beautiful organisms that also offer opportunities for substantial food production in Maine. This workshop, led by North Spore educator Louis Giller, will share background and hands-on experience with some of the most reliable outdoor cultivation methods. Louis will start with a presentation explaining how to plan and execute log and bed cultivation with species including Shiitake, Wine Cap, Oysters, Chestnut, and Hen of the Woods. From there, we'll get outside and start inoculating, putting what we've learned into practice! Participants will be able to take home a freshly inoculated Shiitake log.

Date: Sunday, April 28, 10:00 am - 2:00 pm

How to Make Great Tasting Coffee

This class explores beans from different origins, the fundamentals of roasting, and the factors that affect coffee freshness. We will cover tasting coffee, flavor profiles, and different types of brewing methods. By the end of the course, students will be able to apply a basic understanding of the flavor profiles of coffee from different origins and roast levels, be able to brew coffee using three different methods, and apply the factors of grind profiles, temperature, and weight measurement to make truly great tasting coffee!

Join Chris Toy for a hands-on evening of fresh pastas and sauces! Learn houw to make homemade egg and vegetable pastas in the time it takes to boil a gallon of water. Twirl your pasta in a choice of 2 rich garden tomato sauces, including a creamy vodka sauce, with a combination of Italian cheeses on top! Don't eat beforehand and bring a container for any leftovers.

Homemade Candy and other Delights Spring 2024

Why not! Let’s get together for a three-hour class to go over some of my favorite treats. We will go over how to make homemade chocolate, turtles, peanut butter cups, peppermint patties, chocolate covered pretzels, coconut clusters, salted caramels, candy nuts, caramel corn, and maybe even maple fudge. We will learn the basic tools and materials, ingredients, recipes, and step-by-step process. 

All classes are taught by instructor, Jessica Steele and all materials are included. Registration and payment are required to hold your spot in class. Space is limited! Cancellations must be made at least 48 hours in advance to receive a refund. If our Adult Ed office or instructor cancel class, refunds will be issued to students.

Baking with Alternative Flours

Come explore a delicious alternative to boring, store-bought Gluten Free flour. In this class we will bake a batch of gluten-free, dairy-free Ginger Molasses cookies using a variety of nut and legume flours. Note: This is not a class for those allergic to either nuts or eggs. Ingredients fee included in registration.

Cooking Sourdough Bread 5.2.24

There is nothing like the aroma of freshly baked sourdough bread unless it is enjoying a slice of freshly baked bread with butter shortly after coming out of the oven! Students will learn how to care for a sourdough starter, how to knead using two different techniques, and how to mix, shape and score the bread for baking. The instructor will demonstrate two ways to bake a loaf, using a cloche or a stone with steam in the oven, followed by a taste testing. Students will then shape, score and bake a loaf of their own in class. They will take home some sourdough culture (bring a 32 ounce container) for bread baking at home. A $5 ingredients fee is payable to the instructor at class.
